Làm sạch cá, khía trên thân cá 1 vài đường nhỏ. Băm nhỏ sả, ớt, gừng. Nhặt và rửa sạch thì là, rau ngổ.
Cho cá vào nồi ướp cá cùng với sả, ớt, gừng nên thêm 2 thìa bột canh, 1/5 thìa đường, nửa thìa hạt tiêu. Khi ướp nhớ sát đều gia vị lên mặt cá và để khoảng 15p cho cá ngấm gia vị.
Sau khi ướp xong thì cuộn thì là, rau ngổ cho vào trong bụng cá. Cho cá vào nồi hấp cùng với 1 bát con nước. Hấp cá trong khoảng 15p-20p, cá chín tắt bếp, mang ra dĩa.
